Italian Tomato and Bean Salad

This salad is so refreshing and healthful – a real summer treat!

  • 1 lb trimmed haricots vert (or other thin green beans), fresh or frozen
  • 3 medium tomatoes, preferably different varieties, seeded and diced
  • 1 can white beans, e.g. Great Northern or Cannellini
  • 1 shallot, minced
  • 1 Tbsp. fresh oregano, minced or ½ tsp. dried oregano
  • 1/3 cup loosely packed fresh basil leaves, shredded
  • 3 Tbsp. lemon juice
  • 1 tsp. lemon zest
  • 3 Tbsp. olive oil
  • salt and pepper to taste

If using fresh haricots vert, steam them till crisp-tender and place in ice bath; if using frozen, simply defrost them.  Slice beans into 1” pieces.  Combine lemon juice, lemon zest, oil, shallot, salt, pepper and herbs in a medium bowl; whisk to combine and adjust seasonings if necessary.  Add remaining ingredients and gently toss to combine.  Allow to stand at room temperature for 30 minutes for flavors to combine.  Gently retoss and serve.
