Lebanese Green Beans

Resist the urge to omit the cinnamon – it really makes the dish!

  • 1 lb fresh Roma beans, halved, or 1 lb. frozen
  • 2 shallots, minced –OR- 1 small onion, chopped and 2 cloves garlic, minced
  • 2 Tbsp. olive oil
  • 1 cup tomato juice –OR- ½ cup water and ½ cup tomato sauce
  • 1 tomato, diced
  • ¼ tsp. cinnamon
  • salt and pepper

In a medium sized saucepan, saute the garlic and onions in olive oil until the onions become translucent.  Add the beans, cover, and allow them to steam in their own moisture for about 15 minutes.  Add 1 cup water, tomatoes, tomato sauce, and cinnamon, cover, and cook for 30 minutes.  Add salt and pepper to taste.
