Blueberry Walnut Tossed Salad

Here is a simple recipe for a quick, healthy salad that makes use of good-for-you greens, berries and nuts

Blueberry Walnut Tossed Salad

  • Mixed organic baby greens
  • Fresh blueberries
  • Toasted walnuts, chopped
  • Goat cheese, crumbled

For each serving of salad you will need 1 ½ cups greens, 1/3 cup blueberries, and ¼ cup each walnuts and goat cheese.  Toss greens with dressing (recipe below) and divide among salad plates.  Top each salad with berries, nuts and cheese.

Blueberry-Walnut Dressing

-makes enough for 6 salads

  • ¼ cup blueberry-basil vinegar
  • ¼ cup walnut oil
  • 1 tsp sugar or equivalent sweetener of your choice
  • ½ tsp coarse salt, or to taste
  • ¼ tsp. freshly ground black pepper

Place all ingredients in a jar with a tight fitting lid.  Shake till dressing combines.  Taste and adjust salt or sweetener to taste.
