Sweet, healthy and delicious – a perfect summer salsa!

I made this last nite for the sweet peas in my Bible study group and they (and John, the fruit-aholic, of course) liked it so much I thought I’d share the recipe.  The recipe makes a big ol’ bowlful, so it’s perfect for a party.  If you’re not feeding a crowd, you should halve the recipe as you need to eat in within a day or two.

Watermelon Salsa

  • 3 Tbsp. lime juice
  • 1 Trader Joe’s frozen cilantro cube (or 1 Tbsp fresh, minced)
  • 1/2 tsp. kosher salt
  • 1 yellow pepper, diced
  • 1 orange pepper, diced
  • 1/2 an English cucumber, diced
  • 1 fresh jalapeno, seeded and minced very fine
  • 1 shallot, minced very fine

About 2 hours before you want to serve the salsa, whisk together the lime juice, cilantro and salt in a large bowl.  Add all the diced veggies and stir well to combine.  Then add:

  • 5 cups diced seedless watermelon

Lay the watermelon on top of the mixed veggies, draining off any juice before adding to the bowl.  DO NOT stir the watermelon into the veggies!  Place the bowl, uncovered, in the fridge for two hours to chill and allow the watermelon to dry out just a bit.  Just before serving add:

  • 1 1/2 Tbsp. lemon juice (or more lime juice)
  • 1/2 tsp. kosher salt

Gently stir to combine and add more lemon or lime juice and salt to taste.  Serve with tortilla chips as an appetizer, or as a side salad, or as a salsa over grilled meats.  Since I was serving this to a group I went easy on the cilantro and jalapeno, but it could definitely take more of both.  Enjoy!
